Now world-famous for its Vermont Cheddars and other fine dairy products, Cabot Creamery was founded in 1919 as a cooperative of 94 farmers in this region of northern Vermont. Originally, Cabot only produced butter due to the poor refrigeration of the times. However, as the refrigeration technology improved, Cabot was able to supply fluid milk to bottlers in southern New England and began making cheese in 1930.

Cabot's world-class cheesemaking facilities now produce many types of Cheddar (see Cheddar), Monterey Jack (see Monterey Jack), Cottage Cheese, as well as many lower-fat and flavored varieties. Fine-aged Cheddars, such as their Private Stock and Vintage Choice (hand selected by Cabot's President), routinely win awards in national cheese competitions. Their new line of flavored Cheddars includes Sundried Tomato/Basil, Five Peppercorn, Garlic and Dill, Onion and Chive, and Mediterranean.

The plant in Cabot, Vermont offers tours of its facility, and has a retail shop and offers easy mail order of fine Cabot cheeses. Visitors on their way to Stowe will also find a Cabot store on Route 100 in nearby Waterbury. Their products may be found in virtually all retail dairy departments and specialty cheese displays.

Cheddars
The finest cheddar cheese in the world is proudly made by Cabot Creamery in Vermont. Using only pure, fresh milk provided by our farmer-owners, all of Cabot's cheddars are made naturally, without chemicals or preservatives. We let time, gentle care and Mother Nature nurture our cheddars until they are aged for our specific flavor profiles.

Mild Aged for two to three months, Mild Cheddar has a creamy flavor and smooth consistency - an ideal substitute for Monterey Jack. We also make a fabulous Monterey Jack that outshines its California counterpart any day.

Sharp Aged for at least five to eight months, this silky Sharp Cheddar has a full, well-developed flavor with just the right degree of sharpness to tingle the taste buds of enthusiastic cheddar lovers.

Extra Aged gently for nine to fourteen months, Extra Sharp Cheddar boasts a rich flavor and dense texture that elevates this popular Cabot specialty above all other brands.

Hunter's After ten months of aging, big bold Hunter's Cheddar is ready to go! Seriously sharp and rough around the edges, Hunter's varies from vat to vat and remains the favorite cheese of its namesake. In Vermont, definitely a cult cheese for those in the know.

Private Stock Aged a minimum of sixteen months, Private Stock is an extraordinarily fine, clean-flavored extra sharp cheese. Private Stock is hand-tended and closely monitored throughout the ripening process, promising this elegant cheese will be the smoothest extra sharp on, or off, the block.

Vintage Choice Aged undisturbed for eighteen months, limited edition Vintage Choice is also our president's choice. Before Vintage Choice is laid down to rest in our "cellar", Cabot's president hand selects the cheddar that qualifies for this distinctive category. Complex, opulent and full of nuances.

Light The first, and still foremost, reduced-fat cheddars on the market, these award-winning Light Cheddars will melt in your mouth and on the grill! A case of less is more - less fat and less calories equals more great taste.
