A sixth generation family dairy farm, crafting an artisanal cheese using the milk from their cows.
Jeremy Russo along with his wife Jennie and two children Sophia and Elijah own and operate Southwind Farm in North Rupert, Vermont. Jeremy milks 100 head of Holstein cows that enjoy grazing on the lush grasses and vegetation of the rich Mettowee Valley river bottom land. Jeremy became interested in cheese making in 2005 after taking a course by renowned cheese maker Peter Dixon. As a result of this course, Jeremy formed a relationship with Mark Fischer of Woodcock Farm in Weston, Vermont. Mark helped Jeremy develop Southwind Farmstead Cheese by following the style of a traditional Swiss Raclette. Southwind Farmstead Cheese is a raw cow’s milk cheese that is made by Jeremy at Mark Fischer’s creamery in Weston. The cheese is aged a minimum of 60 days, it is the perfect cheese for melting or letting it warm to room temperature and eating with crackers. Southwind Farm is located on route 30 in the town of North Rupert. The farm is approximately 12 miles north of Manchester, Vermont and 3 miles south of the village of Pawlet, Vermont. |
