Our cheeses are all made with fresh milk, not pasteurized, and are available seasonally. They are all aged over 60 days as required by regulation.

Cheese Varieties

Sheep:
Three Owls Tomme - a semi-hard, natural rind aged sheep cheese, hinting at sweet and nuts.

Cow:
Liberty Hill Blue - a mild blue with minimal veining
