Holy Cow!, Meadowsweet, Tarte de Force
The Holy Cow! has a layer of chopped pecans, walnuts and dates sprinkled with a pinch of cinamon and nutmeg . For an added bonus, a cultured cream is added to the milk. Meadowsweet comes from the same batch of milk without the nuts and it is brined in wine that has been steeped with lemon rind for that added zing. The Tarte de Force is a 3 pound wheel that is two layers of cow cheese as described above but has a miccle layer of goat cheese that has a layer of capers and coarse cracked pepper........a real taste sensation...indeed
