Gouda and Red Salad Pizza
Serves 4
Thinly slice:
· 1 medium head radiccio
· ½ medium red onion
· 1 roasted red bell pepper
· 2 ripe plum tomatoes
Mince:
· 2 cloves of garlic and toss with:
· 3 Tablespoon balsamic vinegar
· 2 Tablespoon olive oil
· ½ teaspoon coarse salt
· ½ teaspoon freshly ground pepper
· 1 teaspoon dijon or other grainy mustard
· 1 teaspoon maple syrup
Stir occasionally and drain when vegetables have wilted, approx 1-2 hours.
Add to vegetables:
· 1 cup grated Taylor Farm Gouda Cheese
Assemble pizza by spreading:
· 1 cup grated Gouda over 1 cooked thin pizza crust
· spread vegetables over cheese and top with
· ½ cup additional Gouda
Bake at 500 degrees until cheese melts, about 12 minutes. Let stand a few minutes before slicing.
