Spinach Spoonbread
Serves 4
Ingredients:
· 1 package frozen onions in cream sauce
· 1 10 ounce package chopped spinach
· 2 eggs, slightly beaten
· 1 cup sour cream
· 1/4 teaspoon salt
· 1 8oz package corn muffin mix
· 1/2 cup (2 oz) Cabot Cheddar Cheese, shredded
Preheat oven to 350. Prepare onions according to directions; set aside. Cook spinach; drain well. In large bowl, combine all ingredients. Pour into greased 1 1/2 quart casserole.
Bake for 30-35 minutes.
